Italian Rainbow Cookies

I've been trying to find a recipe for cookies that I have heard called Italian rainbow cookies. They are a layered, tri-colored (usually red, green and yellow) chocolate covered cookie that has some sort of jelly (I think) in between each layer. I want to say that there is almond paste somewhere in there. The texture is very dense. They are found in just about every Italian bakery in NYC.
Anyone have a recipe or have any idea what these are really called so I can do another search?

  1. I use the Rainbow Cookie recipe from epicurious.com. I've been using it for years, and everyone seems to like the cookies.

      I make lots of cookies at Christmas but these are the ones everyone goes for first. My husband calls them tri-quarters, but I think he means tri color. (Someone told me that's a Star Trek reference). 7 layer cookies are I think the ones with chocolate chips, butterscotch morsels, nuts, condensed milk, I don't remember what else (that was one of my first Xmas cookies, haven't made them in a LONG time). This Epi recipe (mine is called Neopolitan layer cookies) is pretty close to mine, I use apricot preserves on one layer and seedless rapberry on the other, it's no harder than making a normal cake. The hardest part is cutting it into little pieces.
      PS I've seen in some Arthur Ave bakeries these cookies with an additional chocolate cake layer on the bottom, every year I'm tempted to try but haven't yet.

          I've used the epi recipe several times -- great cookies.

              Interesting that the recipe on Leite's site calls for 2 sticks of butter, while Epi's calls for 3! How can this work? I think, tho may be recalling incorrectly, that both call for the same proportions of everything else, certainly of flour. How can this be/work?

            2. yea! the epi recipe is EXACTLY what I'm looking for. thank you all for your input. maybe i'll try out the chocolate bottom layer, too. i'll take a trip to Arthur ave for some research!
