I've always been partial to Pho Van. 3370 Fraser St or #220-633 Main St. The Fraser location is open to 11p or midnight on weekends. Main St closes around 9p I think. Both locations are cash only. I've been going there for many years. Have tried a few others, but I find the soup base at Pho Van more flavourful.

Thanks for the Pho Van recommendation. Just got back from a great bowl of pho in a surreal environment that included a dancing Santa, a nativity scene bedecked in LED lights, a widescreen TV showing pink latex clad women writhing around in plastic bubbles (looked like the Vietnamese version of Star Search) plus lots of neon and mirrors.
