Pan-Crisped Pancetta

  • 6 ounces thinly sliced pancetta


A welcome alternative to bacon, pan-crisped pancetta is great on a sandwich or atop eggs.

  1. 1Heat a large frying pan over medium heat. In batches, add pancetta and cook until browned and crisp, about 5 minutes per side.
  2. 2Remove to a paper-towel-lined plate and let drain briefly. Serve.
