Ingredients (14)

  • -a couple pounds of chicken breasts (pounded thinly and cut into the size of the palm of your hand)
  • 1/4 cup of all purpose flour
  • 3 tablespoons of butter
  • 2/3 cup of chicken stock
  • juice of one lemon
  • 1/2 cup of capers (divided in half)
  • 5 large Russett potatoes (peeled and boiled)
  • 1/3 cup of extra-virgin olive oil (plus one tablespoon)
  • 3 cloves of garlic (pushed through a garlic press)
  • 1 teaspoon of anchovy paste
  • 1 teaspoon of sea salt
  • 1/2 teaspoon of cracked pepper
  • 4 cups of fresh baby spinach
  • a couple handfuls of zesty sprouts for topping chicken


Forget everything you ever knew about loving Chicken Marsala, Chicken Parmigiano, or Chicken Cacciatore! One bite of Chicken Piccata and you’ll forget how much you even love those Chicken cousins! Piccata has way more kapow! flavor, plus, it’s inexpensive, fast and super-easy to make! Make some tonight and WOW your guests for around 10 dollars for all four entrees. Now who doesn’t love that?


  1. 1a couple pounds of chicken breasts (pounded thinly and cut into the size of the palm of your hand)

Pound the chicken breasts with a kitchen mallet to about a half inch thick and cut into pieces the size of a deck of cards

  1. 1-Dredge the chicken pieces in a little flour
  2. 2-2-3 tablespoon of butter and a little olive oil in a skillet on medium-high heat
  3. 3-brown chicken on both sides and remove from pan.
  4. 4-in same pan, add another pat of butter, 2/3 cup of chicken stock and scrape brown bits from pan.
  5. 5-add the juice of one lemon
  6. 6-add a couple tablespoons of capers
  7. 7-return chicken to pan and simmer.
  8. 8-add cracked pepper to taste. (not salt, it should already be salty)
  9. 9if sauce does not thicken enough, you can always wisk-in a teaspoon of flour, and it will thicken as it simmers.
  10. 10For the sauteed spinach:

In a separate pan on medium heat, add extra virgin olive oil, about a half teaspoon of the crushed garlic and let the spinach wilt for a couple of minutes. remove from pan and set aside.

  1. 1Sicilian Potato Salad-

Just peel, chop, and boil some potatoes (about 5 large) .
with a mortar and pestle, I added about 2 garlic cloves (pushed through a garlic press) about a teaspoon of sea salt, about a teaspoon of anchovy paste, and crushed it into a paste with the pestle. Then added about a 1/4 cup of extra virgin olive oil. Stir.
Toss with the warm potatoes. Add a couple tablespoons of capers and chopped fresh parsley, and cracked pepper. You can add a splash of white wine vinegar if you want it a little tangier.
I LOVE this salad way more than any potato salad with mayonnaise.

  1. 1Assemble potatoes on the bottom, follow with the sauteed spinach, and top with a few pieces of the Chicken Piccata. Add some of the gravy from the pan and garnish the top with zesty sprouts
