Fennel Gorgonzola Salad

Ingredients (4)

  • 1 fennel bulb with tops
  • crumbled gorgonzola cheese
  • pine nuts
  • white balsamic vinagar


This is a very easy yet very impressive salad for a dinner party. It’s light texture and the airiness of the fennel pieces give it a cool feel excellent for a summer outdoor meal.


  1. 1Cut off the fennell tops and save for garnish
  2. 2Cut bulb in half and then make thin slices of the bulb halves creatin thin (about 1/8") pices.
  3. 3Arrange on a platter in a mound and sprinkle on gorgonzola pieces, pine nuts and sprinkle with white balsamic vinagar.
  4. 4Garnish the platter with a ring of the lacy fennell tops around the mound of salad
