  • 1/2 cup semisweet or bittersweet chocolate chips
  • 1 cup creamy peanut butter (not natural)
  • 8 ounces cream cheese, at room temperature
  • 2/3 cup powdered sugar, sifted
  • 1/3 cup whole milk
  • 2 teaspoons pure vanilla extract
  • 1/2 cup cold heavy cream
  • 1 chunk bittersweet chocolate, for shaving

Beat creamy peanut butter with cream cheese, add powdered sugar, milk, and vanilla until everything’s smooth and creamy. Separately, whip some heavy cream, and fold it into the peanut butter mixture. Spread over the melted chocolate in your pie crust, then refrigerate at least 2 hours before shaving chocolate over the top and serving.

Instructions

  1. 1Melt the chocolate chips in the microwave until smooth. Drizzle the chocolate over the crust; spread into an even layer on the bottom.
  2. 2In the bowl of a stand mixer fitted with the paddle attachment, beat together the peanut butter and cream cheese until smooth, about 1 minute. Add the sugar, milk, and vanilla and beat until combined.
  3. 3In another bowl, whip the cream to medium-stiff peaks. Fold 1/3 of the whipped cream into the peanut butter mixture, then gently fold the remaining whipped cream into the mixture. Scrape into the pie shell. Cover and refrigerate until set, about 2 hours or overnight.
  4. 4Using a vegetable peeler, make chocolate shavings over the top of the pie.
