Ingredients (8)

  • 6 carrots (raw)
  • 1/2 a lemon juice
  • 2 cloves of garlic, chopped
  • 3 tablespoons of olive oil (or a good vegetable oil)
  • 1 tablespoon of ground cumin
  • A handful of chopped cilantro
  • salt and pepper to taste

Instructions

  1. 1Peel the carrot with a potato peeler, wash them and cut them in thin slices, using a good knife and a cutting board.
  2. 2Put them in a medium size pan. Cover them with water and add a pinch of salt. Cook the carrots for about 10 minutes, without a cover, or until they are tender.
  3. 3In a small bowl, prepare the sauce. Mix the lemon juice with a pinch of salt and pepper, the garlic and the cumin with a fork. Add the oil. Mix well.
  4. 4Drain the carrots in the sink using a colander. Put the carrots in a medium bowl and add the sauce. Stir. Add the chopped cilantro. Cover with plastic wrap.
  5. 5Put in the fridge for 2 hours or more. This will helps to develop the flavors. Serve cold. Enjoy!
