  • 2 large sweet potatoes
  • 16 oz.bag fresh baby carrots
  • 1/4 cup heavy cream
  • 1/4 cup finley chopped fresh mint. plus 4 sprigs for garnish
  • 1 bottle Blue Moon Harvest Moon Pumpkin Ale
  • 1/2 cup apple juice
  • 1 Tbsp. flour

Summary

These potatoes have a special twist on the classic mashed potatoes and gravy. Using sweet potato, carrot and mint the flavors pair well. The Blue Moon Gravy compliments the fall vegetables with the pumpkin and spices. Who would have known potatoes could be so tasty? These would be a great side dish for Thanksgiving dinner, giving it a little flare.

Instructions

  1. 1Peel and cut into large chunks sweet potatoes.
  2. 2On stove top steam sweet potatoes and carrots together until tender.
  3. 3Combine in food processor until smooth. Add heavy cream and pulse. Add chopped mint, pulse.
  4. 4In saucepan reduce beer, simmering about 25-30 minutes.
  5. 5In small bowl, combine apple juice with flour until smooth.
  6. 6Add to beer reduction and cook 3-5 minutes while stirring constantly until thickened
  7. 7Serve over mashed potatoes and garnish with mint sprig.
