  • 2 boneless skinless chicken breasts
  • 1/2 Cup almond paste
  • 1/2 Cup shredded mozzarella cheese
  • 1/2 Cup plain bread crumbs
  • 4 Tablespoons unsalted butter
  • 2 garlic cloves
  • 1/2 Cup sherry

I first made this dish about 18 years ago. I adapted it from something my mom made when I was growing up.

Instructions

  1. 1Pound chicken breasts flat
  2. 2In a small bowl combine cheese and bread crumbs
  3. 3Spread almond paste carefully on chicken breasts, avoiding the edges
  4. 4Sprinkle bread crumb mixture over almond paste
  5. 5Roll breasts up jelly roll style, secure with toothpicks
  6. 6In non stick fry pan melt butter over medium heat
  7. 7Saute breasts in butter for about 3 minutes per side or until lightly browned
    reserve drippings for sauce
  8. 8Lightly grease medium sized baking dish
  9. 9Place breasts in prepared baking dish
  10. 10Bake at 350 degrees for 20 minutes
  11. 11Add sherry to reserved butter in saute pan
  12. 12Add garlic to butter in reserved saute pan
  13. 13Simmer over medium heat until reduced by about half
  14. 14Serve with rice and vegetable
