Weeklong culinary excursion

First of all congratualtions everyone to this great site!

I will be visiting New York for a good week in September/ October also to decide if I want to relocate to the city for two years some time next year. After finding this site it's moved up on my list quite considerably. :-) I spent a year as an exchange student in the Midwest years ago and would not touch pizza or any other fast food for at least a year afterwards... But reading all your posts raised my spirits.

So this trip should also be a bit of a culinary excursion (and I'm prepared to travel for it). I'd like to sample anything not European especially Asian fare. So far I've set my eyes on the following:

- Sripraphai for Thai food
- Bao 111 for Vietnamese
-Cafe Mingala has received mixed critics here. Has anyone been recently?
- I'm still trying to decide on a good dim sum place. Ping's and HSF have received good posts. What's the difference between the two? Also, not being a dim sum buff (not very common in Switzerland) I like the carts where you can see first before you order. But I suppose you need to have very high turnover at the restaurant to still get a good and fresh meal if they cart the food around. Suggestions?
- And I've not made up my mind yet for southern food. Would you rather recommend Margie's Red Rose Diner or Amy Ruth's?
- And finally where do I get the best steak? (In Switzerland they are so expensive, I have to take a deep breath every time I tell the butcher to cut the meat unswisslike meaning a slice more than 1.5cm thick.)

I am of course open to any suggestions of "must-eat-at" places or recommendations instead of places I have mentioned.
