Weekday lunch in Vegas? LOS? Mon Ami Gabi? Commander's Palace?

There's a good chance we'll be in Vegas for a couple of days in December. (If Cal goes to the Vegas bowl, and even if its UNR we might still decide to go...) If so, we'd probably arrive on a Tuesday late (9 or 10) and be leaving early Thursday am. Dinner Wednesday would probably be a hot dog at the game, so we'll want a good latish lunch on Wednesday. We are holding a reservation at Paris, because we got a great rate. Now, keep in mind we go to Vegas several times a year, but our next trip probably won't be until June (unless dh decides to hit the CES show....). I've eaten at LOS maybe four times, loved it, but never for lunch. I understand the menu and not the buffet is the way to go at lunch, but is the general quality the same? (We will have a car...)...or should we try Mon Ami Gabi, which sister Susan loved, and I've never eaten at...Or, as an alternative, how late is Mon Ami Gabi open? Would it be a possibility as a late evening nosh either night, and if so should we make reservations? Or should we juice up for the game with some of those 25 cent martinis at Commander's Palace? (with a designated driver, of course....)....Any chowhound thoughts?
