Carnivores near Oakland’s Dimond neighborhood might check out Wayland's Meat on Fruitvale between 580 and Macarthur. This old-fashioned family butcher shop features excellent meat and service from Wayland and his wife, Sylvia. Wayland buys whole pork, lamb and sides of beef, and cuts to order. They will split and slice marrow bones and short ribs, quarter rabbit and debone that pork shoulder. I get almost all my meat from them, as this kind of neighborhood service and skill is rare these days and deserves support. Most butchers and supermarkets sell pre-cut meat from boxes.
It’s a small shop and stock varies. Last week they had fresh rabbit, free range chicken, ground lamb and oxtails, aside from the standards. Shop-made bulk pork sausage is a little spicy, and kids emptied the platter of patties I fried up for an extended family brunch. Twice. A variety of commercial and shop-made sausage in casings include Italian-style, chicken with apple, boudain, and lamb. Ask if you don’t see what you want; it might be in the back. Call ahead if you absolutely have to have something. Wayland handles special orders promptly.
