Vegetarians visiting Seattle from SF

My wife and I are spending four days in Seattle over Labor Day weekend. Our main agenda is good food and drink. We are both lacto-ovo vegetarians, but are happy to eat at "regular" places that offer something good for us. We're staying in Capital Hill, but we'll have a car.

We live in San Francisco, so we have no need for good ethnic food, nor for noveau-California style fare. What we're looking for is really good regional Pacific Northwest, or one-of-a-kind places - stuff we can't get at home, in terms of food, drink, or ambiance.

Here's what we have planned so far. Please disabuse me if any of these places are lousy, and clue me in to what we're missing! Cost is not a big issue, and we're happy to eat up to five meals a day if necessary.

Eltana (no Montreal bagels in SF!)
