I put a few vanilla beans in a 750ml bottle of vodka, capped it tightly, and put it in a cool, dark corner of the garage for three weeks. The tip of one bean has a little chunky red stuff on it, and there are red chunks floating in the liquor.
I'm guessing anything involving "red chunks" is no good, but I don't get how anything could get funky in a bottle of vodka.
