A few years ago, there was a very good sushi bar called Tsukasa on the 3rd floor of the Mitsuwa Plaza in Little Tokyo. I believe the owner/head chef was named Yamaha (I could be wrong). If any you have had the pleasure of sitting at his bar, you would remember his signature move of deftly *horizontally* slicing a cucumber into thin slivers in like 3 seconds just millimeters from his index finger.
He was also a wonderful chef, and when I asked him to make something new and creative, he would never fail to bring out something mindblowing.
The restaurant changed names a few years ago, and I haven't had the opportunity to go there since. Does anyone know if the chef is still there? What is this newly named restaurant like?
