So I've recently realized that I have a pretty strong fixation with tripe, so ridiculously tender and yummy when it's braised and seasoned well. Now that the weather is getting chillier, I'm interesting to find more hearty tripe dishes at restaurants around the city, any pointers on where you've had some good tripe dishes?
A few tripe dishes that I swear by:
- Egg in a hole with tripe and cheddar at Fedora
- Barrio tripe at The Dutch
- Tripe and bean stew with blood sausage at Toro
