A Tribune article even RST could love: the Jibarito

Be sure to check out the article in the Tribune today on the history of the Jibaro or Jibarito sandwich, a Puerto Rican restaurant mainstay which, like Italian beef, was really invented here and would be hard if not impossible to find back in the old country.

It's exactly what we'd like to see more of from our media-- an informed exploration of authentic ethnic cuisine in Chicago's non-trendy neighborhoods. (Not surprisingly, it's by Monica Eng, the most fearless adventurer among the Trib's food writers.) If, as we flatter ourselves, Trib folks read this board on occasion, then well done-- and more of it!
