I adore tres leches but there are so many bad ones out there pumped up with metallic tasting leavening, stabilizers, shortening, and excessive sweetners that give this classic a bad name.
In contrast, the tres leches cake served at a recent dinner party was a stand-out. Well-saturated but not drippy, dense cake, and frosted with soft, pure whipped cream. I had to find out who made it and was pointed to Market Hall Bakery. Don't know how much it cost, but it made me fall in love with tres leches again.
