I had a couple of stalks of corn (actually more than a couple) sitting in my fridge just screaming to be used.
So I figured what better use of corn than to make ice cream, right?
But I've done corn ice cream.
But I've never done "Tortilla Chip" ice cream.
Sufficiently intrigued I took out my handy-dandy ice cream maker and set about making corn tortilla ice cream.
Cook the corn, remove niblets, puree niblets in food processor, strain and reserve the liquid. (By the way, this corn juice is fabulous and reminds me of those canned corn juice drinks you find in China.)
Add the "corn liquid" to your basic custard base, then add a good amount of kosher salt and Lawry's taco seasoning, then add it all to ice cream machine, and right before the last hour of freezing incorporate crushed tortilla chips (from Costco).
Voila, tortilla chip ice cream.
I'm thinking next time I can add some V8 Juice, maybe some purred avocado and make a "Nacho Ice Cream". The color certainly would be gnarly, but I bet it would taste kind of, well, cool.
