Epicurious.com just came out with a top ten BBQ list which includes both Lem's on 59th and Speed Queen in Milwaukee, both of which are, IMHO, exceptional, though they somehow managed to leave out the best commercial BBQ in the country, Cooper's in Llano Texas.
Though the article was authored by Jan and Michael Stern who, to me, are the culinary writing equivalent of eating at Olive Garden, the closing line of the first paragraph offers an amazingly insightful perspective of BBQ in the United States. "The ten barbecue parlors that follow represent America's best regional varieties, and they are as different from one another as ten licks of flame on a burning hickory log.
I will include the link to the article, it's worth a brief look, if for nothing more than to be able grumble about them leaving out your favorite BBQ joint.
