Tongue at Katz's

So like 2 years ago I went to Katz's for the first time, and I went for table service because the counters looked overwhelming. I asked for a tongue sandwich, and the waitress told me--in a tone suggesting this should have been obvious--that they don't serve tongue. I said "But it's on the menu right here and that sign over there!" She said they'd stopped serving it about a year ago, and I should pick something else.

Fast forward a bit, I'm now a Katz's pro, and while I'm waiting to give my order at the counter recently I see on the cutting board, right next to the brisket, what looks for all the world like a big piece of tongue. But I didn't ask about it or anything & just got my pastrami (which I'm not complaining about!).

So: who's got the story on tongue at Katz's?
