Tomi Harase has joined the team at Katsu-ya.
He was the owner and chef of Café Blanc in Beverly Hills which closed. He said that he cooks at Katsu-ya on Ventura Blvd. in Studio City and at the new location, also on Ventura Blvd. (at Hayvenhurst/Rubio)next door to the Baja Fresh in Encino - which is where I saw him just this week. Apparently, he splits his time between the two restaurants. He said that he is slowly working the menu toward his "Café Blanc" style of Japanese with some French ingredients and technique.
