The telltale heart

The animal was dispatched on Saturday, the heart and tenderloin marinated all day yesterday, and tonight I prepared a sort of venison Stroganoff. I never really understood it when people would say, "The longer I chewed, the bigger it got" ... until now. I couldn't believe myself! I'll eat pig snoots, ears, tails, feet, but I had a very hard time with this particular venison. It's not as if I'd met the deer. But I know the hunter very well. My folks at dinner said it was delicious. Tomorrow I attempt venison jerky. Oh my!
