I bought some tamarind concentrate (also labelled "nuoc me chua") last month and used some in a recipe. It's been in the fridge since then. I was suprised last night when I opened it and it smelled and looked fine.
How long does it last in the fridge? It is not the block kind, but rather has a runny ketchup-type texture.
The only ingredients listed are tamarind and water. Are there unlisted preservatives at work here? Or is tamarind's acidity to thank?
