So, I'm having more people over than usual this year for St. Patrick's Day, so I've purchased two corned beef briskets. I've done a brisket in the Le Creuset enameled dutch oven several times before (both on stove and low oven heat) and it's come out wonderfully.
However - I only have one dutch oven, so I'm wondering if I can put both briskets in there! They are only about 3 lbs each, and can comfortably fit on top of one another. Since they will be covered in liquid anyway, does it really make a difference if there are two in there?
