Need help with southern Indian cuisine

We went to Udupi Palace last night on our way back from somewhere. It was our second venture into southern Indian cooking. The first was Dasprakash, some months ago.

At Dasprakash, there were eight of us and the owner ordered us up a selection, mostly dosas. Good, but unmemorable. At Updupi it seemed like everything we ordered, with the exception of a very tasty chick pea curry, was essentially fried bread, all served with the same two condiments -- one vegetable-based, the other a coconut creamy dip. Neither meal struck me as altogether that interesting or satisfying.

I'm sure there's a there there, and the question is how/what to order so that you end up with an interesting variety and a meal. I'd like to figure this out, hoping a knowledgeable chowhound will provide me with a clue.
