I generally go to Lobster Place in Chelsea for their sushi-grade salmon (better prices than Korean and Japanese markets). But it can be a bit of a pain for me to get to these days. I called Fish Tales to inquire if they had sushi-grade salmon. They said yes. I asked them if it had been previously frozen. They replied it had not been frozen and it's sushi grade because of the way it's been bled and a couple of things that had nothing to do with freezing to kill parasites like how it was caught. He seemed to take pride in the fact that his sushi-grade salmon was never frozen.
It is my understanding that salmon can harbor parasites unless it has been previously frozen under certain conditions. Lobster Place freezes their sushi-grade salmon. According to the man I spoke with on the phone, Fish Tales does not. I'm very hesitant to buy my salmon for raw consumption at Fish Tales.
I've asked the fishmonger around 7th Ave and 3rd Street if they carry sushi-grade salmon. Their answer was no. Any other leads? And I don't have a Cotsco membership.
