Periodically there are requests for good slow cooker recipes and I always reply that there are tons online but you have wade thru a lot of bad to find the good ones. Sites like http://southernfood.about.com/library...
have a few winners but most are the 1 can cream of mushroom, 1 can cream of chicken soup crap that is so prevalent to crock pots.
Imagine my surprise when a friend sent me a link to a "Dummies" article (you know math for dummies, wine for dummies, Internet dating for dummies)and the 2 recipes I tried were really quite good!
The classic beef stew was just that a classic. The only changes I made was to replace 1 cup of the beef broth with a cup of good red wine and replace 1 potato with a parsnip. It was hearty and wonderful for the raw wet days we are having here in NE.
The Moroccan Vegetable Stew with Couscous was really good too. The only changes I made here was to up the spices 1/2 way thru. When I first tasted it after about 4-5 hours I just didn't get the hit I thought of from the cumin and paprika so I added a few more dashes of cumin and about a 1/4 tsp of both hot and sweet paprika. That was just what it needed. I also made my own couscous and added slivered almonds. Again another great meal for cold/raw day.
