Slippage and Return to Glory: a general NYC question

Chowbabe's comments about Nobu made me think: for quite a while after 9/11 it was difficult for restaurants to get ingredients that are flown in, like exotic fish and produce. Does anyone agree that maybe that's the reason some places (e.g., Nobu) seemed to be slipping, but now are okay again? Also, was Nobu an isolated case, or did anyone notice the problem/correction elsewhere? Just wondering.
