I decided to try an Asado side of beef ribs whole and this is what it looked like. I put a lot of rub on it 24 hours ahead of time. I put in on the fire at 11am and took it off at 6pm. The butcher forgot and cut it once so I had to piece it together. It turned ok but could have been on a little longer. I knew I would be tired of turkey. The ribs were only aged 15days. Next time they will be aged 25 I think. Total weight was 48lbs
The leg on the side is a Ram Leg wrapped in bacon and caul fat. It took about 4 hours.
