I came up with some other ideas.
1) Soup--you can make Friday afternoon and keep in a crockpot overnight.
Use canned tomato soup as your base. Follow instructions on can, and add any one or more of the following:
--smoked whitefish broken into bite-sized pieces and fresh dill (I would not mix this with other ingredients)
--the contents of one package of "soup greens," available in most supermarkets
--kidney beans (canned is easiest)
--lima beans (frozen works well)
--your favorite macaroni or other small pasta (especially good with the kidney beans)
If dairy fits in with your meal, you can substitute an equal amount of milk for the water (although I think it wouldn't work with the whitefish).
2) Ready-made salads: Sabra makes an excellent line of prepared kosher salads. I've lost track of how many variations of hummus they make. Speaking of hummus, it's a great dip for crackers or raw vegetables, especially baby carrots. Also, see my yogurt topping post of yesterday for another good crudite dip.
3) If it's a dairy meal, serve fresh fruit with several types of cheese for dessert. Muenster goes very well with green grapes--nice salty/sweet contrast.
