Based on my recent meal, I believe that Senderens is finally back on track after the departure of chef Robert for La Grance Cascade. The food is as great as ever, and the new executive chef seem to have finally mastered the size and style of Senderens' cuisine.
It is therefore, imo, one of the very best restaurants in Paris. The trademark of Senderens is to rely on the sheer force of excellent ingredients while invoving them in very subtle compositions.
The one limit is that the wines by the glass are not as good as they were at Lucas Carton. You can do great food with inexpensive quality products, but nothing replaces great wines. But the good news is, the wine list is the one of Lucas Carton with much more gentle prices -- so getting a bottle is a better idea than taking every recommended glass of wine (it used to be the ideal solution). They also said that they are gonna reintroduce a couple of Lucas Carton dishes in the menu.
