Good day... I crave the small fish known as smelt, preferably for purchase raw and by the pound. I vaguely recall some 'Hound(s) mentioning grilled smelt at one of the westside japanese tapas and sake houses, but it seemed that they were served in quaintly small skewered portions of 3 or 4, perhaps. But I remember my mother flash frying up POUNDS of these creatures, after having gutted their tiny torso (but leaving the backbones and heads intact), dredging them in flour, and cooking batches of french fry-sized whole morsels; some with a surprise cargo of roe intact!). Sided with ripe tomato, steamed rice, and a bit of patis (filipino fish sauce). Would 99 Ranch have them, or perhaps Santa Monica Seafood Market or Bangluck? Fresh/raw preferred, but even frozen/raw is good. Fried like frites, these are so addictive fresh from the frying pan, but as well served chilled out of the refrigerator, like cold fishy jerky. Thanks for any pointers, in advance...
