Help for a Seattlelite visiting Manhattan for the first time

My husband and I are visiting New York for the first time ever. He'll be working one day, so I'll be on my own then. We will be staying in Tribeca. Are there any casual restaurants that you would recommend, preferably some near our hotel? We are looking for less expensive places, probably no more than $15-20 per person most days, but would be willing to try something a little more expensive for 1 or 2 meals- up to $40-50 per person.
We are interested in true New York style pizza, not the Neapolitan style since they have those in Seattle. Other chowhound threads on NY pizza are a little overwhelming, to say the least. Also looking for recs on cheesecakes with a cake crust, not graham cracker crust. We'd also love input on Chinese and Italian food.
Other places that we are planning to try are :
Shake Shack
Katsu Hama
Katz's
Kitchenette- planning to go by myself for breakfast or lunch while the hubby works
Bubby's

Any recommendations would be so helpful. Also, since this is our first visit, is walking from Tribeca to say, Chinatown or Little Italy, Soho do-able?
Thank you so much!
