Although I have been a chef for thirty years catering apart from family and friends is not and has never been my cup of tea. However my husband voluntered my services for his bosses wedding for 200 without asking me first so I am stuck. Money is not the object but he wants two things I may need help finding. He lives in the San Gabriel Valley and he wants a cross between a New England clambake and a Pig roast. so here is what I need if anyone can help.
1. Wholesale seafood on te eastside preferably to not transport to far - but will go anywhere but like clams and mussels for 200 where I don't need a restaurant permit etc. Places like seafood city are not going to work.
2. He wants a roast pig and lamb however he wants it done and manned on a spit in his backyard while the the reception is going on. He does not want it precooked he wants the theatre, I seem to remember that that grrek curch next to papa cristos may ahve done lamb on a spit but I need to have those fully manned while I take care of ( with the helf of some fellow chefs)the seafood and other side dishes, bartenders, servers, hawaii dancers and firebreathers etc. I am to old for this but if I pull it off who knows I may host a hound monthly party.
