I have long considered taking a shot at starting a food truck business. The food I love to cook, and cook best, is seafood. I make an awesome gumbo!
I was wondering if you think a seafood themed food truck could be successful in the Raleigh area.
Things I might serve: Gumbo (Shrimp/Chx/Andouille), Shrimp po'boys, Lobster rolls, NE Clam Chowder, fish taco's, mussels in white wine sauce, etc...
Any thoughts, feedback, etc... would be appreciated.
