I'd love to find the correct cheese for my grandmother's macaroni recipe with "store cheese", and squeezed, whole, peeled tomatoes....
Years ago, the mom and pop Italian grocery stores in Scranton sold something called "store cheese". I remember that it was really sharp. When my mother would make this dish, she'd send me to Catalano's Market, on Cedar Avenue, in Scranton, to buy the cheese. When Mr. and Mrs. Catalano sold their store and retired, in the late 1970's, that was the end of being able to find that cheese. The recipe works with extra-sharp cheddar, but it's not the same.
Does anyone know what kind of cheese this might have been?
