Although I'm probably just ignorant of the regionalization of Chinese food in the States, I was surprised to find something missing on the menus of Chinese restaurants here in DC. Scallion pancakes are crispy on the outside, chewy inside, little flapjacks of dough, scallions, and minimal spices that for some reason became a staple of my culinary habits while living in New England. They're not healthy, not full of complex seasoning, but I think I'd consider them a Chinese comfort food. So, on this rainy friday, if anyone has an idea about where a guy can find some tasty scallion pancakes, please share the wealth. Happy weekend.
