I have a hebrew national beef salami that says to keep refrigerated, it's use by date was June 30, 2013. Today is almost a month later. It has been in my refrigerator since I purchased it (it was in the vegie drawer, forgot I had it, behind the potatoes). It used to be I would just throw it away, and regret not remembering it sooner.
However, online research says dates are often arbitrary. In fact, in the case of hebrew national salami, I have even found a few folks on CH that take this salami and hang it unrefrigerated out in the open to dry out.
Is there really something to worry about here or is this salami a cured product even though they say to keep it refrigerated.
1) what is your opinion on eating this?
2) At this point, do you think you could hang it at this point safely?
