First, let me thank all you CHs for your everlasting supply of patience as you help me become a better cook. You saved my Thanksgiving Day stuffing and cranberry sauce, and helped me make a yummy salmon.
Here is my question. I am making this herbed rack of lamb for dinner: http://www.epicurious.com/recipes/foo... . It has basil, pecorino Romano cheese, and herbs in the crust, making it a very potent, buy yummy dish. I want to supplement the meal with a salad that will serve as the main dish for a part-time vegetarian but a side dish for the rest of us. The part-timer likes salads with cheese, nuts, and pears, but I didn't know if that would be too much. When I made the lamb over the weekend, our normal romaine salad didn't seem to complement the lamb.
So. Can you recommend a salad that would be a wonderful accompaniment to this herb and cheese lamb?
