Sage (DFW)

For those of you that have missed the old Inwood Quarter OR have missed the stellar cheffing of Chris Svalesen (ex-Go Fish, 36', Fish, Scott's, etc), pine no more. Sage, Chris' new restaurant has opened in the old Inwood Quarter space (Inwood at Cedar Springs). The interior has been painted and upgraded and additional air conditioning has been added. Free parking in front, of course.

The menu is a slightly different one for Chris. This time he's locked in on "fresh seasonal New American". While 4 of the 7 entree selections were from the sea, his specialty, there were also beef, bird and pork selections. The highlights of the evening were many including the Chilean sea bass which was lightly pan fried and then served in a rich fish broth with clams and mussels. The beef filet with blue cheese was one of the best servings of beef that I have had in Dallas. Also scoring big were the tuna tartare appetizer with pickled diakon that was very pickled ginger like and the beefsteak tomatoes. Rich,lush and beautifully ripened, for once it was a tomato worth eating. Chris is one of the few chefs that really loves sweets and his desserts were varied and did not disappoint.

Sage is open for dinner and Sunday brunch and will be opening for weekday lunch in a week or so. Prices are very fair and currently it is BYOB. I highly recommmend it.
