My grandfather, who was a baker, used to make a cheesecake in a square pan. It was no more than 2" high and had on top a butter and sugar crust that was crackled and the butter was liquidy at first. It was NOT Paskha, the Russian cheesecake with the Sabayon lemon sauce and had no nuts in it, but was a simple dish. Does anyone know the name? I think it began with the letter K. A recipe for it?
