Yesterday around 8:30 p.m., I finished baking the perfect cheesecake. No cracks, perfect creamy-looking texture. The recipe called for letting it sit in the oven (door cracked) for 2-3 more hours. After the first hour, I was so exhausted (I'm actually sick right now), I went to bed, but set the timer on the oven so I'd hear it beeping and get up to put the cheesecake in the frig. The timer came and went and I slept on. At 6:30 this morning, I woke up mortified. The perfect cheesecake still sat in my oven--but is it ruined after being finished cooking and sitting out for 10 hours???? I really need some help here. I don't want to serve it to guests if it's bad, but I HATE to throw it out and cook another whole cheesecake unnecessarily!. Please help me.
