Which restaurant in Epcot or Epcot resort area for dinner? (one diner is vegetarian)

Our favorite place to eat in WDW is V&A, and we already have a reservation for there. We want to try someplace either in Epcot or in the Epcot resorts for another nice/grown up dinner. We love kids and don't care if they are in the restaurant , by the way. I mean "grown up" more in terms of quality of food. We are staying at the Dolphin for part of our trip, and I know between Swan and Dolphin there are a bunch of options (Shula's, Bluezoo, Il Mulino...) and there are more at the other resorts, like Flying Fish and Yachtsman. (I don't eat meat but don't mind a steakhouse as long as there is something impressive for me to eat; it happens on occasion!) I think we ate at Bistro in Epcot's France, but maybe it was Chef's? We ate at the downstairs one and weren't impressed. Husband eats everything, but I am strictly a vegetarian, as in no fish. I do love cheese and cream, though! Thanks so much in advance.
