My local chinese take out has a recipe for salt & pepper squis, shrimp and scallops. They are lightly breaded, fried, and topped with sliced fresh jalapenos. I'd love to make at home, but can't get the batter correct. It's VERY light (you can see the shrimp thru it). I've looked on line but don't really see anything.
Anobody out there know what I am talking about and have a recipe?
