I promised this recipe in the thread on marmalade, but I had a business trip come up so I'm a bit behind on getting this posted.
The recipe is from a book called 250 Classic Cake Recipes, published in 1951. Here is the paraphrased version:
1.75 cups sifted cake flour
3/4 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
3 Tbs shortening (I use butter)
1 egg, well beaten
1/2 cup molasses
1 cup orange marmalade (I've made this with other marmalades as well)
4 Tbs boiling water
Sift dry ingredients. Cream shortening, add egg, mix well. Add molasses and marmalade, beat thoroughly. Add sifted dry ingredients and hot water alternately, beating well after each addition. Pour into greased pan, bake at 350F for 25 - 30 minutes (I think it takes longer than this but don't recall how long). Makes 1 8" cake.
