Can someone please hook me up with birthday cake recipe that registers under a billion on the glycemic index? Maybe something with whole wheat flour, or perhaps some other foundation? I’d still like a thin sheath of semi-sweet “frosting,” and one without artificial sweeteners. Fats are okay.
It is for my five year old, so while I don’t want to make it from black beans or something crazy, I do have flexibility in that I can stick a candle into just about any round shaped food, tell him this is what all kids have for their birthday, and get him to buy it…though, I don’t want to lose too much face in front of the other guests. (I never knew that raising a kid in society would involve so many birthday parties, at which I’d be obliged to choke down such horrifying quantities of cakestuffs.)
