Yesterday I went to a nice Mexican restaurant here in Austin, TX and had a bowl of Hongos Guisados--a vegetarian mushroom stew with melted cheese on top. You spoon it onto tortillas and it is really great. Does anyone have a recipe? It's so rich that I asked if it was made with beefstock, and the witer asked the kitchen and they said "Nope--it's all veg." I did a google search and an Epicurious search and pulled up nothing. Thanks!
