I'm cooking baby back ribs and desperately need to tenderize them.. the thing is they're already cooked. Here's what I've done :
-Dry rubbed with spices and let "marinate" for few hours
-Cooked in liquid (mainly apple juice and beer - covered) in the oven for 2 hours at 250 F.
- (was about to finish them on the barbecue (quickly at high temperature) with bbq sauce for a caramelized coating)
... but it turned out they don't seem tender. I'm very surprised, cuz I think 250 is a low enough temperature to get tender meat.
My question is: Should I put them back in the oven at low heat (will it tenderize it or make it worse)? Or have I reached a point of no return?
Please help me save those ribs I put so much love into!!
