Providence

I really wasn't going to bother posting about this because there has already been said so many good things about this place that I didn't think I could add to it.

But our anniversary dinner this past Wednesday was so extraordinary I really must say something.

We ordered the five course tasting menu with wine pairings. They started us with an amuse of peaky toe crab, then one of uni with caviar on top that was sitting on what I think was a gastric of roasted tomato and celery. Incredibly vivid flavors in a terrifically imagined creation. This was followed by an amuse of a parfait in three layers: on the bottom was a lemon base on top of which was an asparagus mousse which was then topped by creme fraiche infused with black truffles.

While we saw others in the restaurant eating the tasting menu, I did not see anyone else being served the first two amuse gueules that they brought us. I guess they really do take special occasions seriously.

Which was further reinforced by the appearance later in the meal by Chef Cimarusti, who came by to introduce himself, congratulate us on our anniversary and then ask if it would be okay with us if he sent over a few extra desserts to help us celebrate!

I think others have already detailed the superb dishes that comprise the tasting menu so I won't again detail them here. Except to say that everything was absolutely brilliant.

Providence is terrific on every level.
